Chocolate Between Cardamom Cookies

Hi friends, these cookies I made last night for my daughters, my elder one likes Chocolate cookies and my younger one loves cardamom cookies, so I decided to make these cookies, so that both will get happy. Have a look on recipe, hope your kids also like them............. let's make it

Preparation time :- 20 min.                              Cooking time :- 18 - 20 min per batch

Makes :- 36 cookies



Ingredients :-

2 cups whole wheat flour
1 cup oats flour
1 cup unsalted butter
1 cup powdered sugar and cardamom 1/2 teaspoon or 4 pods
2.5 Tablespoon unsweetened cocoa
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt


1. Mix wheat flour, oats flour, salt. baking powder and soda in a mixing bowl.




2. In separate bowl cream (mix till smooth paste) powdered sugar and butter.




3. Start adding flour mixture to butter and sugar mixture slowly slowly without lumps to form a cookie dough.


4. Divide dough in half.



5. Mix cocoa powder in half dough.



6. Now you have half cardamom and half chocolate cookies dough.


7. Spread cardamom dough on a flat surface and keep chocolate dough on it, and cover it to form a roll.












7. Cut the roll in equal 1/2 inch thick.



8. Transfer them to cookie sheet and press little bit with fork.



9. Bake them in Preheated oven at 180 C for 15 - 18 min., till golden brown.

10. Cool them on cooling rack and store in air tight container up to 20 -25 days.

Semolina and bottle gourd savory pancakes (Suzi aur lauki ke chile)

These Pancakes I made this Sunday for breakfast and they are very yummy. healthy and filling. Main thing is that my elder daughter love them so much that she want them for lunch also. I hope everyone like them, you must try this recipe........

Preparation time :- 30 min.                                    Cooking time :- 20 min.

Makes :- 12 Pancakes                                          Serves :- 6 People






Ingredients :-

1 1/2 cups grated bottle gourd
1 1/2 cups semolina
1/2 cup wheat flour or gram flour
1 1/2 cup buttermilk or yogurt
water as needed
salt to taste
1/2 tsp red pepper powder
1/2 tsp turmeric powder
1 tsp coriander powder
oil for pancakes
Non - stick pan or tawa


1. Mix dry ingredients together.


2. Add buttermilk by mixing it slowly.


3. Add grated bottle gourd and water as needed to make pancake like consistency.


4. Keep pancake mixture for 20 minutes to set.



5. Check the consistency again after 20 minutes (as semolina expands in liquid) add water if needed to make it easily spreadable.

6. Heat pan over high heat and put 1 tsp oil, let it heat nicely, now put 1/2 cup of batter on pan and spread evenly to form circle.



 7. Slow the heat to medium high and let it cook on one side and flip it over.



8. Cook nicely till golden brown on other side also and serve hot with any sauce or chutney. I served it with Curry leaves and peanuts chutney. will soon share its recipe too in my upcoming post.

Note :-

1. Always heat pan fully before putting batter to avoid sticking.
2. don't put any oil for another pancake before pouring batter.
3. Put oil around the edges before flipping it over.

Whole Wheat cardamom cookies

These cookies are so yummy and healthy too. My little daughter is a picky eater, but she loves these cookies very much and I always keep them in stock, because it requires only normal ingredients to make...... hope you all love them.....




Preparation time :- 20 min.                                                   Cooking time :- 20 min.

Makes :- 30 Cookies


Ingredients:--

1 1/2 Cups wheat flour
1/2 Cup quick oats
1/4 Cup soybean flour
1/4 Cup gram flour
1/2 Cup powdered sugar or granulated sugar
3/4 cup butter softened (I used unsalted)
1/2 tsp of cardamom powder or 4-6 pods
1/2 tsp baking powder
1/4 tsp baking soda
2 Tbs yogurt if required
1/4 tsp salt

Procedure :--

1. Preheat Oven at 180 C for 10 min.
2. In case you are using granulated sugar and cardamom pods, powder them together in a grinder.
3. Shift wheat flour, gram flour, baking powder and soda together.
4. Mix oats, soybean flour, salt and cardamom powder to the flour mixture.
5. In separate bowl cream powdered sugar and butter.
6. Now mix dry ingredients to wet ingredients, slowly slowly to form a soft dough without over mixing, add yogurt if dough is too dry.
7. Make 1.5 inch diameter ball and press them slightly with fork and bake them for 12-15 minutes.
8. Turnover cookies and bake them for more 4-5 minutes till golden brown.


Note:--

1. you can add any combination of dry fruits, my daughter doesn't like them.
2. I do my baking in LG convection oven hence it take 4-5 min. more for perfect brown cookies in comparison to gas ovens or OTG.
3. Crispiness of cookies depends on amount of sugar and butter added.

Eggplant Pasta

Today I had only onion, tomato and eggplant in my refrigerator and my kids are insisting me to cook pasta for them, so I decided to cook pasta for all family members with these ingredients only and it comes out yummy. ya I forgot, I added one more ingredient i.e., Maggie atta noodles masala .

Preparation time :- 30 min.                         Cooking time :- 15 min.

Serves :- 4 persons






Ingredients :-

2 Cups Pasta (Boiled and drained)
1/2 Cup Cheese
1/2 cup Eggplant cubed
1 cup onion cut in big chunks
1 cup cubed tomatoes
1 pouch Maggie atta noodles masala
1 tbs garlic chopped
1 tsp black pepper
salt to taste
2 Tbs oil



 1. Heat oil in a large wok.


2. Add garlic and onion, saute till light brown. Now add eggplant and fry well.




3. Add tomatoes and saute well , add salt, pepper and maggie masala and mix and saute well till eggplant is tender.




4. Add boiled pasta and mix.


5. Add grated cheese, mix till cheese melts.



6. Serve hot and enjoy with your family.

Buttermilk Biscuits Mini Pizza

I was feeling little bit hungry by 4 pm and had some soft buttermilk biscuits, leftover mix veg and grated cheese. So I decided to make some mini pizza with Tea.

Preparation time :- 10 min.                                Cooking time :- 5 min.

Serves :-  2

Ingredients:--

2 Buttermilk biscuits
2 Tbs Tomato sauce
3 Tbs grated cheese or cheese slice
Mix veg (I used leftover)



1. Cut two whole wheat buttermilk biscuits in half width wise. 


2. Put tomato sauce on each biscuit.


Put mix veg and grated cheese. Grill for 5 minutes or till cheese melts.



Now enjoy with Cup of tea..........

Whole Wheat Buttermilk Biscuits

Hi, Today I made Buttermilk biscuits but not using All purpose flour, with whole wheat flour for my kids and my especially for my papa who is diabetic. Hope you all like it.

Preparation time :- 15 min.                                 Cooking time :- 20 min.
 
Makes :- 18 Biscuits

Ingredients :--

2 Cups whole wheat flour
1 Cup buttermilk
2 tsp Baking powder
1/4 tsp Baking soda
80 gms cold butter cut into pieces
1/2 Tbs salt




Procedure:---

1.  Preheat oven at 450 F (230 C) for 10 minutes. Take 1 3/4 cups flour, leave 1/4 cup flour dusting dusting later. Add baking powder, baking soda and salt to the flour and mix well.




2.  Add chilled and cubed butter to the and start mixing with your finger tips till you get bread crumbs like consistency.




3. Now mix buttermilk to the flour and start mixing with fork till its gathers as big ball.



4. Dust flour on flat surface and put dough on it and roll it with your hands to cover the flour.




5. Now pat with your hand and flat the dough to a rough rectangle shape.



6. Fold it in three and pat again to form a rectangle. Do this three times.



7. Now flat the dough to 1 inch thick rectangle and cut biscuits with the help of cookie cutter or small glass.




8. Put them on baking sheet and bake them for 13 - 15 min or till fully baked at 230 C.










9. Cool the biscuit on cooling tray and enjoy with Tea.




Note:-- 

1. I made these biscuits in LG convection microwave. Results may differ in other baking applainces.
2. These are crispy outside and soft and flaky from inside.

Egg and Bread Poha

Ingredients--

3 Eggs
2 bread slices cut in bite size cubes
1 onion chopped
1 green chilli chopped
1 small tomato chopped
2 table spoon oil
salt to taste
black pepper to taste
Chat masala to taste
Chopped coriander

Procedure--

Beat eggs and keep aside.
Heat oil in a pan and fry onions till golden brown.
Add tomatoes and green chillies and salt and saute till tomatoes are tender.
Now add beaten eggs and keep stirring to avoid burning eggs till cooked.
Add bread cubes and black pepper and mix well and cook for 1 minute.
Serve hot after adding coriander and chat masala.
